Assignment means that the Assignor gives the rights of the policy to the assignee. The person that is supposed to be paid (the insurance company here) is giving that right to someone else. This is of course our brief understanding, but you do want to contact a lawyer in your jurisdiction to tell you about this. In the insurance world, this could also mean that the insurance company is simply changing adjusters
